This is such a beautiful, colorful, and delicious salad – perfect for summertime!
Invest in a vegetable spiralizer. Because although you could totally make this salad without one…it will not be nearly as exciting.
Ingredients:
1 Zucchini
Baby Kale
1-2 celery sticks
Cherry Tomatoes
1/2 large cucumber or 2 baby cucumbers
1/4-1/2 red onion
1 Avocado
1 Ear of corn
1/2 cup walnuts
Homemade Dressing:
2 ripe tomatoes
1 tablespoon of sun dried tomatoes (the kind you buy in olive oil)
1 small red sweet pepper or a chunk of red bell pepper
1/2 jalapeño
4-5 fresh basil leaves
1/2 teaspoon salt
1 pinch black pepper
1/4 cup extra virgin olive oil
Note: This is a homemade dressing is yummy, but it’s a lot different than your typical salad dressing. It has more of the consistency and look of a tomato sauce. The taste is very natural, very good for you!
Step 1: Throw your un-shucked ear of corn into the microwave for 3-4 minutes. Remove it from the microwave and let it sit and cool before you shuck it.
Step 2: Toss a baby kale into a salad bowl. The amount is up to you. Spiralize the zucchini into thin, noodle form and add to salad. Every spiralizer is different, so follow the directions of your specific one.
Step 3: Chop up the celery and cucumber into your size of choice. Slice the cherry tomatoes and red onion. Add to your salad.
Step 3: When corn is cool enough, shuck the corn and then using a sharp knife, shave off the corn kernels and add to salad.
Step 4: Using tongs, mix up your salad and then top of with cubed or sliced avocado and walnuts.
Step 5: In a food processor or blender combine all of the dressing ingredients and blend. Either pour on top of your entire salad and mix together or place in a dressing pourer or bowl.
