While I was attending UC Davis, I was SUPER obsessed with a jalapeño steak salad served at a local Italian restaurant.
Once I moved back home, that beloved salad was no longer just a couple minute drive away, and so I had to come up with a replacement.
This is a super-filling salad with a homemade, light and healthy dressing.
Serves 2-4 people
Prep time: 10 minutes
Salad is such a personal thing. So, as far as ingredients are concerned, I’m going to list what I used but you feel free to pick how much you want of each ingredient for your personal salad.
Ingredients:
Mixed Greens
Cherry Tomatoes
Avocado
Cucumber
Red Onion
Mango
Crumbled Feta Cheese
Steak
*Note: Prepare the steak however you’d like. If you don’t know how to prepare a steak or feel like trying something new. I TOTALLY recommend using the recipe/technique in the video below.
Dressing Ingredients:
1 lemon
2 tablespoons olive oil
1/2 teaspoon salt
1 pinch of pepper
1/4-1/2 fresh jalapeño
1 small bunch cilantro (enough to fill 1/4 measuring cup)
Other supplies:
Food Processor
Step 1: Throw all of your dressing ingredients into a food processor and blend it all up.
Step 2: Pour the dressing all over the delicious, colorful salad ingredients that you have put together.
Step 3: Top your salad off with steak.
